Mechado




Ingredients:
  • 3 cloves garlic
  • 1 large onion
  • 2 lbs beef chuck
  • 6 tbsp tomato paste
  • 1 cup water
  • 3 tbsp cooking oil
  • 1 lemon, sliced
  • 1 large potato
  • ¼ cup soy sauce
  • ½ tsp. ground black pepper
  • 2 bay leaves
  • salt & pepper 

Instructions:
1. Heat cooking oil. Saute the garlic and onion.
2. Add beef chuck brown for 3 to 4 minutes.
3. Add the tomato paste and water then simmer until the meat is tender. Add more water if needed. Simmer until the beef chuck is tender.
4. Add the soy sauce, ground black pepper, lemon rind, laurel leaves, and salt then simmer until sauce thickens.
5. Add the potatoes and cook until the potatoes are soft.
6. Serves hot with rice.
